PECAN WAFFLES
1 4 oz bag pork rinds made into pork rind flour
6 large eggs
1 C heavy cream
1 tsp cinnamon
1/16th tsp liquid stevia concentrate (see recipe (http://home.hawaii.rr.com/gkbopp/Food/GALATEA/RECIPES/OTHER/SteviaLiquidConcentrate.htm) in condiment section) or 1/4 C granular Splenda (adds carbs)
1/2 tsp vanilla
1/2 C chopped pecans
Blend all ingredients well and let sit while preheating waffle maker. The batter will thicken considerably. Do not make waffles until the batter is very thick. Place a large spoonful on waffle iron lightly sprayed with non-stick cooking spray. Cook a bit longer than usually to crisp up and brown the waffle. I almost never make these and eat them the same day. They seem better frozen and then toasted in the toaster an another day. You will not taste the pork rinds, and they resemble whole wheat waffles. These are great buttered and served with heated low carb pancake syrup or spread with low carb apricot spread.
These make 10 individual waffle squares. I freeze them after they have cooled completely on a rack and store them in a ziplock bag separated by parchment paper. They are slightly less than 1 carb per serving.
Per serving 230 cal, fat 20 gr, carbs 2, fiber 1, net carbs 1, protein 12 gr.
