Mock Potato Salad

16 oz. bag frozen cauliflower
4 hard boiled eggs, chopped
2 stalks celery, chopped
3 green onions
3 T. yellow mustard
1/2 cup mayonnaise
1/4 t. pepper, or to taste
1/2 t. salt, or to taste
Pinch dill
2 T bacon bits

Cook cauliflower in microwave without water and without covering until very soft, but not mushy. Cool in open air and don't let it sit in moisture. Then when cool, blot over and over again with about 8 paper towels - push down on it, but don't mash it. Cut in small pieces. Mix all other ingredients into the cauliflower. Chill at least 2 hours. Makes 6-8 servings
