Hot Reuben Spread

1 1/2 cups shredded Swiss cheese (6 ounces)
3/4 cup drained sauerkraut
1/2 cup Thousand Island dressing
1 package (8 ounces) cream cheese, softened (lower points by using light cream cheese)
1 packages (2.5 ozs) thinly sliced corned beef, chopped
Cocktail rye bread slices or pretzel crackers, for serving, if desired
1. Spray inside of 1 to 2 1/2 quart slow cooker with cooking spray. Mix all ingredients except crackers/rye bread; spoon into slow cooker.
2. Cover and cook on low heat setting 1 to 1 1/2 hours or until cheese is melted. Stir until cheese is smooth.
3. Scrape down side of cooker with rubber spatula to help prevent edge of spread from scorching.
4. Srve with crackers. Spread will hold up to 4 hours.
Servings: 26 (2 tablespoons each)
