Blues Burgers
(Makes 4 servings)
1 1/2 pounds ground sirloin
1/2 teaspoon cumin
1/2 teaspoon paprika
Freshly ground black pepper
1/4 teaspoon chili powder
Salt
Pinch of cayenne pepper
2 ounces good-quality blue cheese
Your favorite barbecue sauce
In bowl, gently but thoroughly combine ground
beef, cumin, paprika, 1/4 teaspoon black pepper,
chili powder, 1/4 teaspoon salt and cayenne pepper.
Gently form seasoned beef into 8 (1/2-inch-thick)
patties. Use spoon to make shallow indentation in
centers of 4 patties. Place about 1/2 ounce blue
cheese in each indentation, then top with remaining
patties sealing all open edges. Cover burgers with
plastic wrap and refrigerate until needed.
Prepare grill. Lightly season burgers with salt and
pepper to taste, then coat with barbecue sauce. Grill
over medium fire, turning once, 8 to 10 minutes
total for rare, 12 to 14 minutes total for medium and
18 to 20 minutes total for well-done. Baste
frequently with barbecue sauce.
