View Full Version : quick one pan artichoke chicken dinner

I go to Costco and buy the frozen chicken tenders (boneless), the huge jar of artichoke hearts, huge jar of sun dried tomatoes and jar of minced garlic. I just add spoonfulls of the ingrediants to make this really quick dinner.

boneless chicken cut up in bite size pieces
artichoke hearts ( I cut in half)
sun dried tomatoes
garlic

pour a small amount of the oil from the artichoke jar into a frying pan. Add the chicken and garlic. When its cooked, I add the sun dried tomatoes and the artichoke hearts for a few minutes until they have warmed.

Its really good hot or cold over a salad. It only takes about 20 minutes start to finish.

So you don't eat this as is, but on a salad? Sounds yummy, but i would like to know the lbs and ounces of those jars, and you use the whole jar? (sorry, i'm a by the book kinda cook)

I eat it warm, but I have thrown the leftovers on a salad too. I don't use the whole jar, the jar lasts me 4-5 dinners worth. I cook by throwing stuff in, I never measure, but I will make an educated guess. My DH is a huge eater, so this probably will feed about 5 people with leftovers.

3 lbs boneless chicken, cut up in bite size pieces
3 T of minced garlic
1/4 cup of sun dried tomatoes
1 cup of marinated artichoke hearts
